Little Cooker Girl

A few weeks ago I co-chaired the bookfair at the girls school. In the days that have followed the germ filled kids, classes from hell, EARLY mornings,and shoplifting beasts have almost managed to leave my mind. Almost. The good (and bad. And EXPENSIVE) thing about working at the bookfair each day, was that I got to look at all the books. A lot. And buy the books that I wanted. A lot. I bought two great recipe books (to add to my collection of ten million). I SWEAR I am going to try to work my way through them. I am most optimistic about the children's cookbook. It is called 'Cooking for Kids: Winning Recipes'.


Both my girls LOVE to help us cook. Both Julian and Tucker eat almost anything. Teddy is the world's pickiest eater. And, Janey?? Well, she puts Teddy to shame. So while she does enjoy cooking, she will very rarely eat what she has made.


The cookbook has an easy recipe for chocolate chip pancakes, and since this is one of the very FEW things she WILL actually eat, we gave it a try.


My Janey is NOTHING if not totally independent. (Stubborn. Like her dad).

"I can do it by myself", is not so much a declaration as it is a mission statement!

While she was at school I measured everything out so she could "make it herself", with no help.



She loves to break the eggs, and has, after many failed attemps, become quite good at it.


Add milk...



Chocolate chips....

Put them on the griddle......

Mini Morsel Pancakes


2 1/2 cups flour

1 Tbsp. baking powder

1 cup mini chocolate chips

1/2 tsp. salt

1 3/4 cup milk

2 large eggs

1/3 cup vegetable oil

1/3 cup packed brown sugar

Powdered sugar


COMBINE flour, chocolate chips, baking powder and salt in large bowl

COMBINE milk, eggs, oil, and brown sugar in medium bowl

ADD to flour mixture. STIR until moistened (batter will be lumpy)

POUR 1/4 cup batter onto griddle/skillet, flip when bubbly, and cook 1 minute more. Sprinkle with powdered sugar. ENJOY!

I did bookfair last week. We had a 5th grader steal $100 worth of stuff. Yikes - her poor parents had to bring her back with all the stuff. I'd be so embarrassed!
